I mean, even in Germany we now know what peanut butter and jam sandwiches are, but now we are also spreading cashew mousse, almond creme and coconut butter onto our bread, stir it into our smoothies or simply lick a spoonful of the delicious gooeyness.
And we are right to do so, unlike your usual jams, jellies, butter or margarine, seed and nut butters naturally contain healthful fats that benefit heart health, reduce the risk of heart disease and type 2 diabetes, and even lower the risk of obesity despite their high fat content—2 T of a seed or nut butter contain, on average, 16 g of fat.
Fits perfectly to my low-carb/paleo lifestyle and even if you are not into the whole “labelling my nutrition” thing I can only encourage you to at least try it.
Unfortunately most nut and seed butters (even the organic ones) are not 100% nuts and seeds, but can be stretched with water, oil or further additives. Plus the cost around 4€ per small jar – I figured there is an easier, cheaper and more natural way to create them in the comfort of your own home.

Roasted Almond Butter
A high-fat food that’s good for your health? That’s not an oxymoron, its almonds. Almonds are high in monounsaturated fats, the same type of health-promoting fats as are found in olive oil, which have been associated with reduced risk of heart disease.
100g raw almonds
Step 1. Toss your raw almonds onto a baking sheet and roast them in your preheated oven at 180° C for 15 minutes. As soon as your kitchen starts smelling delicious, they are perfect.
Step 2. Simply place the almonds into your food processor and start to blend – patience is key here, as it might take you up to 20 minutes until you reach a smooth consistency.
Step 3. Only after 10 minutes of blending, the almond flour will release its oils and slowly develop a thick and creamy texture – do not give up, do not add liquid – you will get there.
Step 4. After you reached the consistency of your liking, transfer into an airtight jar and store in the fridge.
Step 5. Enjoy on bread, with your joghurt, smoothie or veggie sticks.
